Andalusian Beef & Chickpea Sopa

Recipe
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, chopped
- 1 lb. food .eez beef tips
- 1 quart beef broth
- water, enough to cover
- 1 can chick peas, drained
- 2-3 potatoes, peeled and cut in 1/2 inch pieces
- 1 carrot, peeled and cut in 1/2 inch pieces
- 1 cup dried pasta, broken into 3 inch pieces
- 2 teaspoons salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon smoked paprika
1. Heat the oil in a soup pot over medium to high heat. Add the onions and sauté for 2 minutes; add the garlic and beef tips and toss to coat.
2. Add all the remaining ingredients using water if necessary to just cover. Bring just to a boil, reduce heat and simmer for 30 minutes. Taste and adjust seasoning if necessary.
